With a healthy dose of cayenne in both the marinade and\u00a0 the flour dredge, this sandwich packs the heat along with the crunch. Just the juicy chicken\u00a0 fillet, piled\u00a0 onto a lettuce- and tomato-lined bun, would have been enough to amaze, but the dilly, lemony yogurt sauce puts this one over the top.<\/div>\n<\/div>\n<\/div>\n

BUTTERMILK\u00a0 MARINADE<\/div>\n
\n
475ml\/2 cups buttermilk
\n1 teaspoon salt
\n1 teaspoon black pepper
\n\u00bd teaspoon cayenne
\n8 boneless, skinless chicken thighs<\/div>\n
DILL\u00a0 DRESSING<\/div>\n
350ml\/1\u00bd cups plain Greek yogurt
\n3 tablespoons dill, chopped
\n1 teaspoon garlic powder
\n2 tablespoons lemon juice
\n20g\/\u00bc cup\u00a0 grated
\nParmesan cheese<\/div>\n
\u00a0SEASONED\u00a0 FLOUR<\/div>\n
250g\/2 cups plain
\n(all-purpose) flour
\n1 tablespoon salt
\n2 teaspoons black pepper
\n1\u00bd teaspoons cayenne
\n1 tablespoon garlic powder
\nPeanut or vegetable\u00a0 oil,
\nfor frying<\/div>\n
\u00a0TO\u00a0 SERVE<\/div>\n
Softened butter\u00a0 for buns
\n8 brioche burger buns
\nButter lettuce
\n2 tomatoes, sliced<\/div>\n<\/div>\n

METHOD<\/div>\n
\n
1\u00a0 In a medium bowl, combine all the buttermilk marinade ingredients.\u00a0 Toss in the chicken thighs to coat. Marinate for at least 1 hour in the fridge, or overnight.<\/div>\n
2\u00a0 In a small bowl, combine all the ingredients\u00a0 for the dill dressing. Cover and let sit for at least 1 hour in the fridge to chill.<\/div>\n
3\u00a0 In a medium bowl, combine all ingredients\u00a0 for the seasoned flour. Dip the marinated chicken in the flour mixture until the chicken is completely\u00a0 covered.<\/div>\n
4\u00a0 Heat the oil to 180\u00b0C\u00a0 (350\u00b0F) in a deep pot. Do not\u00a0 fill
\nmore than half full with oil. Carefully fry the chicken for 7 minutes, or until cooked through. The internal temperature should reach 75\u00b0C (165\u00b0F), and the chicken should be golden brown and crispy. Drain on a paper towel-lined plate or wire rack.<\/div>\n
5\u00a0 Heat a large frying pan or skillet. Butter the cut sides of the burger buns, then toast on the hot pan until browned and crisp. Build the sandwiches with the toasted buns, lettuce, fried chicken, tomato\u00a0 slices, and dill dressing.<\/div>\n<\/div>\n

Giant Cinnamon Roll<\/strong>
\n(Serves 12)<\/h3>\n
\u00a0If you\u2019ve never made a breakfast pastry, this would\u00a0 be a great first one\u00a0 to try. Because if a regular cinnamon roll is awesome, this one beats the world.<\/div>\n

DOUGH
\n115g\/\u00bd cup unsalted butter, melted, plus\u00a0 extra for greasing the\u00a0 pan
\n475ml\/2 cups whole milk,
\nwarm to the\u00a0 touch
\n100g\/\u00bd cup sugar
\n1 pack fast-action dried
\n(active dry) yeast
\n625g\/5 cups plain
\n(all-purpose) flour
\n1 teaspoon baking powder
\n2 teaspoons salt
\nFILLING
\n175g\/\u00be cup soft butter
\n150g\/\u00be cup light brown sugar
\n2 tablespoons ground cinnamon
\nFROSTING
\n115g\/4oz soft cream cheese
\n2 tablespoons butter, melted
\n2 tablespoons whole milk
\n1 teaspoon vanilla extract
\n140g\/1 cup icing
\n(powdered)\u00a0 sugar<\/div>\n
METHOD
\n1\u00a0 Generously butter\u00a0 a 25.5cm (10in) cast-iron frying pan, skillet, or cake tin (pan).<\/div>\n
2\u00a0 In a large bowl, whisk together the warm milk, melted butter,\u00a0 and granulated sugar. The mixture should be
\njust warm, registering\u00a0 between 40\u00b0C (100 and 110\u00b0F). If hotter than that, allow to cool slightly before proceeding. Sprinkle the yeast evenly over the warm mixture and let sit for 1 minute. Add\u00a0 520g\/4 cups\u00a0 of the flour to the milk
\nmixture and mix with a wooden spoon until just combined. Cover the bowl with a towel or plastic wrap and set in a warm place to rise for 1 hour.<\/div>\n
3\u00a0 After 1 hour, the dough should have nearly doubled\u00a0 in size. Remove the towel and add an additional\u00a0 100g\/
\n\u00be cup\u00a0 of flour, the baking powder, and\u00a0 salt. Stir well, then turn\u00a0 out\u00a0 onto a well-floured surface. Knead the dough lightly, adding additional flour as necessary, until the dough just loses its stickiness and does not stick to
\nthe surface. Roll the dough out into a large rectangle, about 1cm (\u00bdin) thick. Fix corners to make sure they are sharp and even.<\/div>\n
4\u00a0 In a small bowl,\u00a0 combine the filling ingredients and\u00a0 stir to combine. Spread the filling mixture evenly\u00a0 over\u00a0 the rolled-out dough, spreading right to the edges. Using a pizza cutter, make 3 horizontal cuts to divide the dough into 4 long, evenly sized strips. Starting from the bottom, roll the first strip\u00a0 up right\u00a0 to left. Take the first roll and place it back on top of the next strip, starting again on the right side and rolling up right to left, building\u00a0 on the first. Continue with the remaining strips until you have\u00a0 a giant cinnamon roll.<\/div>\n
5\u00a0 Place the giant cinnamon roll in the prepared pan or cake tin (pan) and cover with plastic wrap. Place in a warm spot and leave to rise for 30 minutes. The cinnamon roll should expand to the edges of the pan during this time.<\/div>\n
6\u00a0 Preheat the oven to 160\u00b0C (325\u00b0F\/gas 3).<\/div>\n
7\u00a0 Uncover the cinnamon roll and bake for 45 minutes. Cover the roll with foil to prevent the outside from burning, and bake for an additional\u00a0 35 minutes.<\/div>\n
8\u00a0 While the cinnamon roll is baking, prepare the frosting. In a medium-sized mixing bowl, whisk together the cream cheese, butter,\u00a0 milk, vanilla, and icing (powdered) sugar until smooth.<\/div>\n
9\u00a0 Remove the cinnamon roll from the oven and let cool in the pan for at least 20 minutes. Once cool, remove from the
\npan and drizzle the frosting over the roll before serving.<\/div>\n<\/div>\n
